Académie Culinaire de France, 1981, ORIGINAL EDITION, pt. in folio (23 x 34 cm), 6 pp. soft cream boards, cover with color reproduction of hunting scene (Baron Karl Reille or Baron Jules Finot ?) on glued vignette and text in brown ed, on the other pages, text in brown with the awards of honors, the composition of the menu with appropriate wines, suppliers and finally the coordinates of the host hotel Sofitel, beautiful SENDING of the chef of the Sofitel, Roland Durand to Dominique Bouchet, chef of the restaurant "La Tour d'Argent" in Paris, belonging to Claude Terrail. The Culinary Academy of France was created in 1883 by the Swiss chef Joseph Favre. During this luncheon, the president is Michel Malapris since 1978. During his presidency the induction ceremonies leave the headquarters of the Academy, rue St Roch to take place in the lounges of major Parisian hotels, for this one at the Hotel Sofitel. having for chef Roland Durand. Beautiful "hunting" menu with seasonal products. The author of the dedication is Roland Durand, MOF and gold medal of the Culinary Academy of France at the time in charge of the kitchens of the Sofitel Sèvres. The chef who received the letter is Dominique Bouchet of the Restaurant "la Tour d'Argent" in Paris (3 stars in the Michelin Guide). He worked from 1981 to 1988 in this establishment owned by Claude Terrail. A very limited edition. RARE. Very good condition; some very light soiling but no great damage to the text.
