Villon, chemical engineer, , large in-16, br. with black cover, 464 pp, 52 pp. of the publisher's catalog, illustrated with 90 black engravings in and out of the text, table of contents, untrimmed. Vicaire (142) notes that Cardelli is the pseudonym of Henri-Louis-Nicolas Duval (1783 - 1854), military officer and man of letters, former secretary of M. de Las Cases (Quérard in "Supercheries littéraires). He is the author of "Mes contes et ceux de ma gouvernante" (1820) and of a "Atlas universel" (1834). The original edition of this work would be of 1862, our edition would be the second edition entirely recast and updated with the new procedures by Villon. But in the 1862 edition, the two authors are Cardelli and Lionnet-Clémandot with an update by François Malepeyre, while for our copy Malepeyre "is" part of the authors and the update is done by Villon! Our copy could be the third edition! This said, this book is a mine of information about confectionery and chocolate. Many engravings and manufacturing processes from the very first hand! But also on the manufacture of syrups, sugared almonds, pralines, nougat, pastilles, liqueur candies, fruit preserves, fruits in brandy, jams, candied fruits, fruit pastes, and also on the manufacturing process of chocolate and its use in cooking. Complete with the publisher's catalog. Very RARE. Good condition of the paper; the cover has some paper tears on the spine and on both sides but without affecting the text.
