According to Vicaire, Cardelli would be the pseudonym of Henri Duval, the former secretary of Las Cases! This volume is part of the collection of "Roret", very appreciated "technical" books of the 19th century. The original edition dates from 1822. This book, as indicated by its detailed title, covers all the tasks of a chef d'office, that is to say all the "sweets", both solid and liquid in a large noble and bourgeois house. Very beautiful fold-out plate with ten figures in black. Very RESEARCHED and very RARE. Very good condition of the binding with a halo on the first 4 pages and some foxing on the edges.
