de PERIGORD, (A. - B.) pseudonym of RAISSON, Oscar Horace: L - Lot 84
de PERIGORD, (A. - B.) pseudonym of RAISSON, Oscar Horace: La cuisine du jour ou l'art de bien vivre au meilleur marché possible. ( The treasure of the cook and the mistress of house...). S.l., without publisher but printed by Villain et Bar in Paris, S.d. (April 1922), in-12, grey cloth back binding, smooth and mute, paper cover illustrated in shades of brown representing a cook in front of his stove busy turning in a pan, surrounded by a "garland" of game and poultry signed R.P. TOGG (a word which means "to cook" in Wolof, language of Senegal!) and engraved by Fortuné Meaulle, IV - 240 pp, 2 pp. of the publisher's catalog, which is not mentioned, Introduction, Table of contents. It would seem that this "unknown" edition of the great culinary bibliographies, except that Lacombe quotes it but without precision, that it is a reissue of the famous "Le trésor de la cuisinière et de la maîtresse de maison" published for the first time at the end of 1851 or beginning of 1852. A change of presentation and title by an indelicate editor! The content corresponds perfectly to the chapters of the first edition at Comon in Paris. Contents: Culinary calendar, Method to be followed to make good food at the best possible price, Nutritive principles of food, Order of service, Menus, Theory of the diner at the restaurant, Instruction on the art of cutting viaandes and fishes, Wines, Preservation of food substances, Preservation of vegetables, Falsification and sophistication of food substances, Recipes and prescriptions of the kitchen, pastry shop and the office by alphabetical order A "small" book for bibliophile and collector. Very good condition of the paper; binding slightly faded with a few very small tears at the edges.
