Flammarion, 1928, eighth edition, 1 vol. gd. in-4, burgundy cloth-covered cardboard, cold filets on boards, decorations, filets, author and title gilded on smooth spine, period binding, XXIV - 432 - (2) pp, strong paper, illustrated with 99 out-of-text plates of equipment, utensils, set pieces and ornaments (not as inscribed 96 plates) including the frontispiece "grand buffet de bal" in red and the plate "division de la pâtisserie" in black and 415 drawings in black in-text, list "œuvres complètes d'Urbain Dubois" 4 pp. in-8, pastedown before the alphabetical table, table of chapters, preface, articles by Jules Janin, Timothée Trimm and Jean de Nivelle, alphabetical table, "Répertoire des maisons et produits recommandés" (10 sheets in pink paper with illustrated advertisements dated 1935, 33rd year! so added after this 1928 edition). The author (1818 - 1901) came from the kitchens of the Rothschilds where he had been the pupil of Louis Haas, he made an incredible career with the Emperor of Germany, King William and Queen Augusta of Prussia. This work is the counterpart of "la cuisine artistique" for pastry and confectionery with superb full page plates (the first edition dates from 1883 in 2 volumes in-4). As indicated in the description, our copy includes the double plate "Grand buffet de bal" and the frontispiece "Division de la pâtisserie", often missing! The 99 plates are in very good condition. One of the most RARE title of the author. RARE. Very good condition of the binding (restored); foxing on the endpapers, on the other hand very little or no foxing in the body of the book and especially on the plates. Some soiling on the edges due to handling.
