DUBOIS, Urbain: Grand livre des pâtissiers et des confiseurs. Paris, Librairie Dentu with a vignette "chez Dupont et Malgat à Paris", 1895, fourth edition, gd. in-4, dark brown half-chagrin, author - title and gilt fleurons on spine with 4 bands. The author (1818 - 1901) came from the kitchens of the Rothschilds where he had been the pupil of Louis Haas, he made an incredible career with the Emperor of Germany, King William and Queen Augusta of Prussia. This work is the counterpart of "la cuisine artistique" for pastry and confectionery with superb full page plates (the first edition dates from 1883 - 2 volumes in-4). As indicated in the description, our copy includes the double plate "Grand buffet de bal" and the frontispiece "Division de la pâtisserie", often missing! The 99 plates are in very good condition. One of the most RARE title of the author. The fact that this volume is in paperback with the publisher's cover, adds a little more rarity! (This kind of volume is very often bound without the original cover. RARE. Good overall condition; cover has been restored and is missing a small piece of paper at the top of the 4th cover. Blue bic on the top of the 1st cover. This one is faded; the paper is in good condition but not trimmed (edges are soiled); the plates are in good condition. This book has been used in the kitchen and what else could you ask for in a cookbook.
