(circa 1930), 79th mile, 16th edition, enlarged and updated by Félix Urbain-Dubois (his son), large pt. in-4, br., red printed cover, XX - 787 pp, frontispiece printed in red, 220 drawings in black including 40 engraved plates, at the end of the volume a "vocabulary of cooking terms" on two columns, table of contents, an inserted and glued leaflet of "Editions Urbain-Dubois" and a 12-page booklet on pink paper of inserted and glued advertisements taking up the "release" of the book "Cartes des vins" in-4 of 28 pges with "beautiful illustrations" on the vine and the wine No need to present the author so much his name is a reference in the kitchen of the late nineteenth century and early twentieth. The first edition of this book dates from 1889; this one being the sixteenth with many additions and an update by Urbain Dubois' second son, Felix. This book is essentially written for young cooks and is the first special treatise on lunches; the second part, more classical, is intended for diners. Urbain Dubois is the precursor of the so-called "Russian style" service, that is to say a service directly on a plate presented to each guest as opposed to the "French style" service where the dishes are all placed on the table and where each guest serves himself as he wishes and in the order he wishes! Numerous illustrations of dishes as well as many seasonal menus. The frontispiece is printed in red. An indispensable "tool" for all young cooks. The pages are not "cut", so never consulted! RARE. Very good condition; the edges of the paper cover are slightly rubbed; a 10 cm tear on the spine but not missing.
