Dentu - Lacroix et Baudry, 1859, ORIGINAL EDITION, in-8, brown half-chagrin "raciné", paper plates "raciné", gilded author's filets and title on burgundy morocco title-piece, 4 gilded fleurons on spine with 4 nerves, speckled edges, period binding, XII - 516 pp. with a few illustrations in black, complete of the dedication "to the Holy Virgin, mother of God", preface, table of the subjects. The author was the cook of the Countess of Auteroche and the Marquise Courtavelle. He died in 1860, one year after the publication of this work. This book is divided into several parts: The definition and principles of cooking - the fundamental preparations - soups - sauces - meat - fish - vegetables and fruits. Well completed with the dedication "to the Holy Virgin Mother of God. "It is O divine Mother, because you are free of all defilement and the model of the most perfect purity ... that I come to give under your holy protection a work which treats of a science to which decency is so well suited"! Many recipes and good advice to practice this noble art. For Lacam, he was the greatest methodist of the century. Lacam who republished this book in 1896 (2nd edition with a tribute of this one). Of a very great RARETEE. Very good condition, both of the binding and of the paper despite some scattered foxing.
